Blanc de Blanc (Bonnie Bubbly)
This wine was made from 100% Chardonnay grapes from the Leelanau Peninsula using the Charmat Method (aka tank method) to keep the fruit flavors found in Chardonnay up front and present on the nose and palate. The fruit for this wine is harvested at the beginning of the season to retain the acidity and bright character desired for the wine.
After a gentle whole cluster pressing, the base wine is aged for four months in preparation for its secondary fermentation. The wine gains its bubbles through a tank re-fermentation, or Cuvee-close. This process allows one to obtain the effervescence desired without sacrificing the varietal character. The aromatics are dominated by the granny smith apple tones with subtle background honeydew melon or apricot notes. On the palate, it is extra dry with balanced sweetness.
